Thanksgiving Pie Favorites!

There are a lot of Thanksgiving traditions and they vary family to family, especially regarding food. I wanted to share with you some of my families traditions. There are so many dishes we could talk about here, all equally delicious. Personally my favorite part of the Thanksgiving meal is dessert! So, here are three of my families go-to Thanksgiving pie favorites!

Pumpkin Pie!
Ingredients:

  • 1 Pie Shell
  • 1 Can 100% Pure Pumpkin
  • 1 Can Sweetened Condensed Milk
  • 2 Eggs
  • 1 Tbls Honey
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/2 tsp salt
  • Whipped Cream (optional)

Directions:

  • Preheat your oven to 350 degrees Fahrenheit
  • In a mixer, combine the pumpkin, milk and eggs
  • With the mixer running slowly add the honey, cinnamon, ginger and salt
  • Mix until well blended
  • Pour mixture into pie crust (I didn’t have time to make my own this year so I bought a pie crust and pre-cooked mine. You don’t have to pre-cook the crust if you don’t want to.)
  • Bake until toothpick comes out clean when inserted into the middle of the pie, about 50 minutes
  • Cool over night and top with whipped cream when serving if desired

Chocolate Pie!
Ingredients:

  • 1 Pie Crust (pre-cooked)
  • 1  1/2 Cups Sugar
  • 1/4 Cup Cornstarch
  • 1/4 tsp Salt
  • 3 Cups Whipping Cream
  • 4 Egg Yolks
  • 1  1/2 Cups Semi-Sweet Chocolate Chip Morsels
  • 2 tsp Vanilla Extract
  • 2 Tbls Butter
  • White Chocolate Candy Bar (optional)

Directions:

  • In 2 small bowls separate your egg whites and yolks, set aside
  • In a large saucepan combine the sugar, cornstarch and salt and stir until well blended
  • Add the cream and egg yolks to the saucepan and whisk until well blended
  • Turn stove to medium/low heat, stirring frequently
  • In a medium saucepan over low heat melt the butter
  • Add the chocolate morsels and stir constantly until fully melted
  • Once the chocolate is fully melted add the vanilla extract, continue to stir constantly (if you stop stirring for any amount of time your chocolate will burn, I was lucky to have my husband help me stir one pot as I tended to the other)
  • The sugar/cornstarch mixture will start to thicken as it cooks. Once the mixture is think and has just started to bubble remove from heat and immediately add chocolate mixture
  • Whisk mixture until fully combined
  • Pour mixture into cooled, pre-cooked pie crust
  • Let cool for at least 4 hours
  • Once the pie is set add white chocolate curls and shavings by scraping a potato peeler firmly down the edge of a white chocolate candy bar (I used Ghirardelli white chocolate)
